It's summertime, and Florida is feeling especially sweltering this year. Time to break out the cold drinks and even colder desserts. My girls are really into popsicles right now. So easy, I love it. I bought these popsicle molds at Bed, Bath, and Beyond for $2.99. They make four popsicles, and each has a fun color for the handle. They also have this ingenious straw at the base, for the inevitable drips to be sucked right out. I think that's currently the girls' favorite part of these!! I've made several different flavors of popsicles since I bought these last week, but today's was declared the best so far.
I made vanilla pudding (from the box, of course), then crumbled up some leftover double chocolate cookies and mixed those into the pudding. Poured it into the molds and froze them for a few hours, and voila! This is literally a under five minutes dessert. The girls loved them, and the chocolate cookie mixed with vanilla pudding was a great combination. You could make an endless number of combinations with these, and I think we'll be trying out a bunch this summer.
